Moong Dal Payasam

Ingredients:

  1. Moong Dal (பாசி பருப்பு) 1/2 Cup
  2. Jaggery powder (வெல்லம்) 1/2 Cup
  3. Milk (பால்) 1 Cup
  4. Ghee (நெய்) 2 tsp
  5. Cashew (முந்திரி) 8 nos
  6. Raisins (உலர்ந்த திராட்சை) 8 nos
  7. Cardamom powder (ஏலக்காய்) 1/4 tsp

Cooking Method:

  • Boil the milk and keep it aside
  • Slightly roast the Moon Dal in a kadai and then cook the dal
  • Heat the kadai add the jaggery powder
  • Pour the water till the jaggery powder is fully immersed. Heat it for 2 minutes.
  • When it is fully dissolved, take it from the stove and filter it.
  • Boil the filtered jaggery water for 5 minutes
  • Add cooked moong dal and milk. Stir well for 5 minutes.
  • Fry cashews and raisins in ghee and add it to the payasam
  • Add cardamom powder and stir well.
  • Serve it hot

Ingredients:

  1. Raw Banana (வாழக்காய்) 3 nos
  2. Red chilly (காய்ந்த மிளகாய்) 1 no
  3. Mustard seeds (கடுகு) 1/2 tsp
  4. Split Urad dal (உடைத்த உளுந்து) 1/2 tsp
  5. Grated Coconut (தேங்காய் துருவல்) 2 tsp
  6. Oil (எண்ணெய்) 1 tsp

Cooking Method:

  • Cut the raw banana into 2 pieces
  • Lightly cook the raw banana with skin (not to be overcooked) and cool it for sometime
  • Now peel the skin and grate it
  • Heat the pan, pour the oil, add mustard seeds, when it splutter, add the urad dal, red chilly and curry leaves. Fry till the dal gets to brown colour.
  • Then add the grated cooked banana, grated coconut and salt. Mix it well.

Cabbage Poriyal

 

Ingredients:

  1. Cabbage (முட்டை கோஸ்) 1 medium size
  2. Mustard seeds (கடுகு) 1/2 tsp
  3. Split Urad dal (உடைத்த உளுந்து) 1/2 tsp
  4. Red chilly (காய்ந்த மிளகாய்) 1 no
  5. Asafoetida powder (பெருங்காயம்) 1 pinch
  6. Moong dal (பாசி பருப்பு) 3 tsp
  7. Oil (எண்ணெய்) 2 tsp
  8. Turmeric Powder (மஞ்சள்) 1 pinch
  9. Salt (உப்பு) to taste

Cooking Method:

  • Chop the Cabbage into small pieces
  • Soak the moong dal in water for 5 minutes and drain the extra water
  • Heat the oil in a kadai
  • Add mustard seeds and allow it to splutter
  • Then add urad dal, asafoetida powder and red chilly. Fry till the dal gets brown colour
  • Then add the moong dal and fry for 1 minute
  • Add the chopped cabbage and turmeric powder
  • Add little water and salt, then keep the stove in low flame, cover the kadai for 3 minutes
  • For every 3 minutes, open the kadai and check if the cabbage is fully cooked
  • Once fully cooked, ready to be served

Green Beans Poriyal

Green Beans Poriyal

Ingredients:

  1. Green beans (பீன்ஸ்) 1/2 kg
  2. Grated Coconut (தேங்காய் துருவல்) 3 tsp
  3. Mustard seeds (கடுகு) 1/2 tsp
  4. Split Urad dal (உடைத்த உளுந்து) 1/2 tsp
  5. Red chilly (காய்ந்த மிளகாய்) 1 no
  6. Asafoetida powder (பெருங்காயம்) 1 pinch
  7. Salt (உப்பு) to taste
  8. Oil (எண்ணெய்) 1 tsp

Cooking Method:

  • Wash the beans in water and cut into small pieces
  • In a pan heat the oil, add mustard seeds, when splutter add the urad dal, red chilly and asafoetida. Fry till the dal gets brown colour
  • Then add the cut beans
  • Add little water and salt. Keep the stove in low flame and cover the pan
  • For every 3 minutes, open the pan and check if the beans are fully cooked
  • Finally add the grated coconut and fry for 1 minute

Ingredients:

  1. Greens (கீரை) 1 bundle
  2. Tomato (தக்காளி) 1 no
  3. Green Chilly (பச்சை மிளகாய்) 1 no
  4. Turmeric powder (மஞ்சள்) 1 pinch
  5. Mustard seeds (கடுகு) 1/2 tsp
  6. Split Urad dal (உடைத்த உளுந்து) 1/2 tsp
  7. Onion (வெங்காயம்) 1 no
  8. Oil (எண்ணெய்) 1 tsp
  9. Salt (உப்பு) to taste

Cooking Method:

  • Clean and wash the greens in water. Drain the extra water
  • Cut the greens into small pieces
  • Heat the pan, pour the oil, add mustard seeds, allow it to splutter and then add urad dal. Fry till it gets to brown colour
  • Then add chopped onion and green chilly and then saute it till the onion gets to light brown colour
  • Then add chopped tomato
  • Then add turmeric powder
  • Now add the chopped greens with salt. No need to add extra water. Frequently stir the greens
  • Once its cooked, it will reduce in volume. Put it in low flame to remove the excess water

Ingredients:

  1. Carrot (காரட்) 1 no
  2. Capsicum (குடமிளகாய்) 1 no
  3. Cabbage (முட்டை கோஸ்) 50 gm
  4. Peas (பச்சை பட்டாணி) 50 gm
  5. Onion (வெங்காயம்) 1 no
  6. Ginger garlic paste (இஞ்சி பூண்டு) 1 tsp
  7. Soya sauce (சோயா) 2 tsp
  8. Vinegar (வினிகர்) 1/2 tsp
  9. Pepper powder (மிளகு பொடி) a pinch
  10. Salt (உப்பு) to taste
  11. Chopped Chinese Onion (வெங்காயத்தாள்) 3 tsp
  12. Oil (எண்ணெய்) 1 tsp
  13. Cooked Basmati rice (பாசுமதி அரிசி) 1 cup

Cooking Method:

  • Chop the vegetables into small pieces and keep it aside
  • In a kadai, pour the oil, add onion and ginger garlic paste. Fry till it gets to golden colour
  • Then add all the chopped vegetables and saute it for 10 minutes
  • Add soya sauce, vinegar, pepper powder and salt. Fry for 1 minute
  • Add the cooked basmati rice and mix well
  • Finally garnish it with chopped chinese onion
