Moong Dal Payasam
Ingredients:
- Moong Dal (பாசி பருப்பு) 1/2 Cup
- Jaggery powder (வெல்லம்) 1/2 Cup
- Milk (பால்) 1 Cup
- Ghee (நெய்) 2 tsp
- Cashew (முந்திரி) 8 nos
- Raisins (உலர்ந்த திராட்சை) 8 nos
- Cardamom powder (ஏலக்காய்) 1/4 tsp
Cooking Method:
- Boil the milk and keep it aside
- Slightly roast the Moon Dal in a kadai and then cook the dal
- Heat the kadai add the jaggery powder
- Pour the water till the jaggery powder is fully immersed. Heat it for 2 minutes.
- When it is fully dissolved, take it from the stove and filter it.
- Boil the filtered jaggery water for 5 minutes
- Add cooked moong dal and milk. Stir well for 5 minutes.
- Fry cashews and raisins in ghee and add it to the payasam
- Add cardamom powder and stir well.
- Serve it hot
Vazhakai Podimas
Ingredients:
- Raw Banana (வாழக்காய்) 3 nos
- Red chilly (காய்ந்த மிளகாய்) 1 no
- Mustard seeds (கடுகு) 1/2 tsp
- Split Urad dal (உடைத்த உளுந்து) 1/2 tsp
- Grated Coconut (தேங்காய் துருவல்) 2 tsp
- Oil (எண்ணெய்) 1 tsp
Cooking Method:
- Cut the raw banana into 2 pieces
- Lightly cook the raw banana with skin (not to be overcooked) and cool it for sometime
- Now peel the skin and grate it
- Heat the pan, pour the oil, add mustard seeds, when it splutter, add the urad dal, red chilly and curry leaves. Fry till the dal gets to brown colour.
- Then add the grated cooked banana, grated coconut and salt. Mix it well.
Cabbage Poriyal
Ingredients:
- Cabbage (முட்டை கோஸ்) 1 medium size
- Mustard seeds (கடுகு) 1/2 tsp
- Split Urad dal (உடைத்த உளுந்து) 1/2 tsp
- Red chilly (காய்ந்த மிளகாய்) 1 no
- Asafoetida powder (பெருங்காயம்) 1 pinch
- Moong dal (பாசி பருப்பு) 3 tsp
- Oil (எண்ணெய்) 2 tsp
- Turmeric Powder (மஞ்சள்) 1 pinch
- Salt (உப்பு) to taste
Cooking Method:
- Chop the Cabbage into small pieces
- Soak the moong dal in water for 5 minutes and drain the extra water
- Heat the oil in a kadai
- Add mustard seeds and allow it to splutter
- Then add urad dal, asafoetida powder and red chilly. Fry till the dal gets brown colour
- Then add the moong dal and fry for 1 minute
- Add the chopped cabbage and turmeric powder
- Add little water and salt, then keep the stove in low flame, cover the kadai for 3 minutes
- For every 3 minutes, open the kadai and check if the cabbage is fully cooked
- Once fully cooked, ready to be served
Green Beans Poriyal
Ingredients:
- Green beans (பீன்ஸ்) 1/2 kg
- Grated Coconut (தேங்காய் துருவல்) 3 tsp
- Mustard seeds (கடுகு) 1/2 tsp
- Split Urad dal (உடைத்த உளுந்து) 1/2 tsp
- Red chilly (காய்ந்த மிளகாய்) 1 no
- Asafoetida powder (பெருங்காயம்) 1 pinch
- Salt (உப்பு) to taste
- Oil (எண்ணெய்) 1 tsp
Cooking Method:
- Wash the beans in water and cut into small pieces
- In a pan heat the oil, add mustard seeds, when splutter add the urad dal, red chilly and asafoetida. Fry till the dal gets brown colour
- Then add the cut beans
- Add little water and salt. Keep the stove in low flame and cover the pan
- For every 3 minutes, open the pan and check if the beans are fully cooked
- Finally add the grated coconut and fry for 1 minute
Keerai Poriyal
Ingredients:
- Greens (கீரை) 1 bundle
- Tomato (தக்காளி) 1 no
- Green Chilly (பச்சை மிளகாய்) 1 no
- Turmeric powder (மஞ்சள்) 1 pinch
- Mustard seeds (கடுகு) 1/2 tsp
- Split Urad dal (உடைத்த உளுந்து) 1/2 tsp
- Onion (வெங்காயம்) 1 no
- Oil (எண்ணெய்) 1 tsp
- Salt (உப்பு) to taste
Cooking Method:
- Clean and wash the greens in water. Drain the extra water
- Cut the greens into small pieces
- Heat the pan, pour the oil, add mustard seeds, allow it to splutter and then add urad dal. Fry till it gets to brown colour
- Then add chopped onion and green chilly and then saute it till the onion gets to light brown colour
- Then add chopped tomato
- Then add turmeric powder
- Now add the chopped greens with salt. No need to add extra water. Frequently stir the greens
- Once its cooked, it will reduce in volume. Put it in low flame to remove the excess water
Vegetable Fried Rice
Ingredients:
- Carrot (காரட்) 1 no
- Capsicum (குடமிளகாய்) 1 no
- Cabbage (முட்டை கோஸ்) 50 gm
- Peas (பச்சை பட்டாணி) 50 gm
- Onion (வெங்காயம்) 1 no
- Ginger garlic paste (இஞ்சி பூண்டு) 1 tsp
- Soya sauce (சோயா) 2 tsp
- Vinegar (வினிகர்) 1/2 tsp
- Pepper powder (மிளகு பொடி) a pinch
- Salt (உப்பு) to taste
- Chopped Chinese Onion (வெங்காயத்தாள்) 3 tsp
- Oil (எண்ணெய்) 1 tsp
- Cooked Basmati rice (பாசுமதி அரிசி) 1 cup
Cooking Method:
- Chop the vegetables into small pieces and keep it aside
- In a kadai, pour the oil, add onion and ginger garlic paste. Fry till it gets to golden colour
- Then add all the chopped vegetables and saute it for 10 minutes
- Add soya sauce, vinegar, pepper powder and salt. Fry for 1 minute
- Add the cooked basmati rice and mix well
